Fried Rice and Gobi (Cauliflower) Manchurian




This is another thing i love to make during week ends because its easy to make and it has all the proteins, carbs, vitamins, minerals... LOL!! u name it.. my kiddos love it too.. so i usually save this kinda things for the weekends...

For the fried rice you'll need

  • 2 cups cooked Basmati rice
  • 11/2 cup finely chopped veggies (celery,capsicum,beans,carrots)
  • 1 tbsp finely chopped ginger& garlic
  • 2 eggs (optional)
  • 1 cup shredded cooked chicken (optional)
  • light soya sauce to taste
  • 4 tbsp oil
  • salt to taste
Heat oil in a non stick pan and add the ginger and garlic. When its slightly brown add the cooked chicken. Let it cook for few minutes and then add the veggies. Mix well and let it cook for another 3-4 mts. When its done add the soya sauce and salt. Be careful while adding the salt because soya sauce is quite salty. After that Add rice and mix well.. This is really tasty!!! LOL! Serve hot with any Manchurians or chili chicken..

A variation for the veggie eaters..

If you want to make the veg fried rice drop the eggs and chicken. Add the veggies straight after the ginger and garlic.

Green Pulav...

Green Pulav.. i usually make this when i have a lot of mint leaves!!! So instead od wasting them i just make a pulav of it and my kiddos love any type of pulav!!

you'll need

  1. 1 bunch of fresh coriander leaves and mint leaves finely chopped
  2. 3-4 green chillies
  3. 1 tbsp ginger and garlic paste
  4. 1 tsp garam masala
  5. salt to taste
  6. 2 onions finely chopped
  7. 4 tspns oil
  8. 2 cups boiled basmati rice
  9. water
  10. a handful of green peas
  11. boiled potatoes - fried in oil
how to make:
  • Grind coriander leaves, mint leaves and green chilies and make a thick paste.
  • Fry onions till golden brown, add garam masala and ginger and garlic paste.
  • Fry till oil seperates then add the grinded paste with a little water.
  • Let it cook till you get a nice aroma and it should thicken.
  • Add salt to taste, peas and the fried potatoes.
  • Add the rice to it and mix well.
  • Serve hot with any veg or non-veg dish.

Nutritious Mix Subzi/Vegetable in Palak/Spinich gravy



This is something i would make when mu kiddos dont eat well through out the day. this dish is full of all veggies... greens, yellow,and even orange. And its easy too.. here goes the recipe..

  1. 1 bunch spinach
  2. 1 medium sized tomato
  3. 1 tsp ginger garlic paste
  4. 1 tbsp grated copra
  5. 1 medium sized onion
  6. 1/2 tsp jeera
  7. 3/4th cup frozen mix veggies (corn/carrot/peas)
  8. 1 medium size potato thinly sliced
  9. 1/2 cup paneer cut into small pieces
  10. oil for frying
  11. salt to taste
  12. 1 tsp redchilli pwdr
  13. 1/2 tsp daniya pwdr
  14. 1/4 tsp turmeric pwdr
  15. 1/2 tsp garam masala
  16. 1 tsp Everest Kitchen king masala
  17. hara daniya/corriander leaver to garnish.
Dont get scared seing all these ingredients this is really easy to make!
How to make:-

  • Steam up the spinach and tomatos together and grind it into a paste.
  • In a kadai heat the oil and add the grated copra.
  • when it is brown add the jeera,onions and potatos.
  • By the time the oinons are brownish the potatos will also be soft.
  • Add the palak gravy and the frozen veggies to this.
  • Add salt and all masalas except garam masala. .
  • Close the kadai and let it cook for some time.
  • Add the paneer and cook again for few mts.
  • Add garam masala and hara daniya and turn off the stove.
  • Keep closed for some time and serve with rotis.

Tender Coconut Pudding/ Ellaneer Pudding... yummm yummm!!!!




Tomorrow im going to one of my friends house for lunch and i decided to make this for her. First i thought about making kheer but then i though everyone makes kheer... i wanted to make something different!!! Then i thought about puddings... bread or mangos or what???? Then my darling daughter reminded me i havnt made coconut pudding for a long time.. So i deciede ok thats it! This would be a treat for both... my frined and my kiddos!!!

This is one of the easiest pudding one can make and all u need is very few ingredients!

  • 1 litre whole milk or full cream milk
  • 3-4 grms of china grass (im still doubtful about the qantity because it was very tough to measure it because its so light!)
  • 1 tin milkmaid
  • 2 tender coconuts
  • dry fruits (cashew and almonds to garnish)
These are the steps
  1. Soak the china grass for 1 day in water.
  2. Grind the coconut pulp with some coconut water.
  3. In a large vesse lboil the milk and china grass till it dissovles.
  4. Add milkmaid after that.
  5. Turn off the flame and add the grinded coconut pulp and rest of the water
  6. Shift it to a serving dish and let it cool.
  7. When its half cook garnish it with the dry fruits.
  8. Cool it before serving..

Gothamb Pathiri (Wheat Roti)



Gothamb Pathiti (Wheat Roti) is one of the specialities of Malabar side in Kerala. Most of the muslims from calicut especially kuttichira and thekkepuram cant imagine a dinner without this! LOL! This is also made for breakfasts. Gothamb Pathiri is also known as Kannuvecha Pathiri or madakki chapathi.

There are 2 -3 folds in this deep fried roti and this is my next entry for Roti Mela.

This is what you'll need.
  • Atta for dough
  • Salt to taste
  • water to knead
  • oil for frying.

This is how u make it.

  • Knead aata as usual.Make medium size ball and make a large chapathi. Apply oil lightly on it.
  • Then fold the 2 sides to the centre. Apply oil lightly on top.
  • Again fold the other 2 sides to make a square and apply oil on top .Now fold again from each corner to form another small square.


  • Turn to the other side and roll again till its thin.. not so thin...
  • Deep fry the pathiri.

Happy Fathers Day !!



Happy Fathers Day to all the dads and dads-to-be!!!! We had a quiet family time yesterday and spend almost all the time at home. We went to buy some groceries after dinner and treated the kids at KFC! Though they wanted to go to the all time fav place McD we somehow tricked them to go to KFC because they had released a new item Toaster Twister and we wanted to try it out.. heehee! Anyways the kids were happy and so no worries! Ohh and ye it was really yuummmmyy!

Idli & Dosa.. the most popular south indian dish!


I made Idli and dosa for break fast today and Sambar and green coconut chutny to go with it.

I and my hubbyjaan likes dosas and both the kiddos prefer idlis.. sign..!! anyways i always have to make 2 dishes at home..

Here is my idli and dosa recipe.. i make the same batter for both.

  • Urad daal/Uzhunnu parippu - 3/4th cup
  • parboiled rice - 1 cup
  • methi/fenugreek seeds - 1 tsp
  • salt to taste
Soak all of them together for about 8-10hrs. And then grind into a fine paste adding water.

Keep the batter overnight.

Add salt in the morning.

If you want to make dosas - spread the batter on a tawa or griddle like a thin big pancake.

If you want to make idlis pour into idli pans and steam it up!

Both my idlis and dosas come out good on the first day.. But how ever the second day the idlis are not as good as the first one! i have to find out how to make them perfect now!

Easy Bread sandwich..


I made this for the potluck chai party at my place. Im glad everyone liked it.

First you have to make a green chutny for this. You'll need

  1. Green Chutny
  2. Red mix
  3. White bread
  4. Lime
  5. salt to taste
  6. Thinly sliced tomatos and cucumbers
To make the green chutny you'll need -
  • Equle amounts of corriander and mint leaves. I took a handful of both.
  • Juice of 2 limes
  • salt to taste
  • Grind all to a fine mixture
For red mix -
  • Equle amounts of tomato ketchup and melted cheese or u can use mayo instead of cheese
  • mix both and set aside
Ok now comes the bread
  1. Cut the edges of the bread. Also cut it into a triangle.
  2. Apply the green mixture on one side .
  3. Place a thinly sliced tomato and cucumber on it
  4. Apply the red mix on the other slice and keep it on top of the veggies.
  5. you can also add finely chopped lettuce to it.
Yummilicious sandwich thayaar!

Egg Curry with coconut


I love this one because its very easy to prepare and my kiddos loves it. So when im lost thinking what to cook i just make this because this goes well with all types of rotis! Today i made Neriya Pathiri and to go with it i made this egg curry.

This is how i made it. You'll need

  • 1/2 of a medium sized onion
  • 1 cup coconut
  • 2-3 shallots
  • 2 eggs
  • salt to taste
  • 2 tbsp oil
  1. Grind the coconut and shallots to a fine paste.
  2. Heat up a Kadai or mud pot (we call a mud pot Chatti in malayalam)!
  3. Add oil and then onions.
  4. when the onions are light brown add the eggs and keep on stirring for 1 minute
  5. Add the grinded coconut mixture and let it boil.
You can also add green chilies to it if you want to make it spicy but i dont do it because my kiddos dont like spicy.

Neriya Pathiri & Egg curry with coconut..



Neriya Pathiri or rice aata roti is one of the Malabari specialities.. this is my next entry for the Roti Mela

This is a very common and popular type of roti in Kerala apart from the Gotham Pathiri.. (do check my next post for that recipe!)

This is how you make it..

  • 1 cup rice flour roasted
  • 1cup water
  • 1/4 tsp coconut oil
  • salt to taste
Boil the water with coconut oil and salt in a large vessel.

When it is boiled add the rice flour. Keep on adding small amounts

Let the water boil for 1 minute

After that mix the water and the flour.

Turn off the stove and close the vessel for sometime.

When it is half cooled knead the flour.

Make small balls and roll into rotis with a Pathiri press.

Here is a pic of the pathiri press!

Heat up a tava or a griddle. When its hot place a pathiri on it. After sometime turn it to the other side.. You can see small bubbles coming out. Turn it to the other side once more. Also keep on pressing with a flat spoon.

Today i made egg curry with coconut to accompany it.

How to prepare Lauki parata


my picky eater son loves paratas only because i give him ketchup and dahi to eat with it! LOL!! so i try out varites of paratas so that he'll eat some veggies!!

i was thinkin gto make palak parata today but then i thought i'll make lauki.. may be in few days i'll make palak roti or parata..

this is what u'll need for the parata...

1 1/2 cups of grated lauki
2 cups aata
1/2 tsp jeera
1 tsp ajwaaii
2 tbsp oil
1 tsp red chilli pwdr
1/2 tsp turmeric pwdr
salt to taste


First squeeze out all the water from Lauki.

Heat oil in a kadai or pan and add jeera.

when the jeera is done add the chilli and turmeric powder.

Just when the masalas is a little brown add the lauki and cook for 2-3 mts.

when its cool mix the lauki to aata,ajwaaii, salt and knead to a dough.

roll out as normal rotis and cook on a tawa।

Delicious Peas Pulav


Ingredients:
• 1 1/2 Cups frozen green peas
• 6 Cups cooked white basmati rice
• 1 Sliced onion
• 1 tsp Cumin seeds
• 1-2 Cloves
• 3 Crushed garlic flakes
• 1 Small piece of ginger
• 3 Cardamoms
• Small piece of cinnamon
• 2 tbsp Ghee
• 2 tsp Chopped coriander leaves
• 1 tbsp Chopped cashewnuts
• Salt to taste

How to make Peas Pulao:
Take a non-stick pan with ghee. Heat it and add ginger-garlic paste.
When the paste turns brownish in color add onions, cloves, cardamoms, cinammon and jeera.
Fry the mixture till the onions turn translucent.
Mix well after adding peas, coriander leaves and cashewnuts.
Cook on medium flame till the peas get cooked.
Now add cooked rice and heat.
Peas Pulav is ready to serve.
Eat it hot with vegetable or a meat dish.
